Rhurbarb, Date & Apple Chutney (Sugar free)

Growing rhubarb on our allotment this year gave me the opportunity to experiment with a few recipes and this yummy chutney was created. The dates, currants and apples sweeten the chutney into a healthy and delicious accompaniment for cheese and crackers.

Ingredients:

300g finely chopped Rhubarb

300g finely chopped Dates

350g finely chopped Apples

150g currants

2 finely chopped Onions

50g grated Ginger root

1 tsp Curry Powder

1 tsp mustard seed

1tsp salt

300ml Apple Cider Vinegar

3Tsp  coconut sugar ( optional)

In a large pot bring to boil vinegar, chopped onions, grated ginger and mustard seeds. Stir in the apples, dates, currants and simmer for about 10 min. Add rhubarb, salt and curry powder. Simmer for approx 25 min until it thickens.

Once the chutney has cooled down spoon into sterilized jars and seal. Allow the flavors to develop for a few weeks.
