Little Gems are delicious with homemade sweetcorn filling. This tasty filling contains no sugar and is a healthy side vegetable or lunch.
Cut Gems in half and boil in salted water until soft (about 15-20 min)
Hollow out and place seeds into cooked corn kernels.
Using hand blender, blitz for 30 seconds, keeping some kernels aside for texture.
Spoon corn filling into gem squash cases and top with grated cheese.
Makes a hot, tasty lunch or attractive vegetable served with your roast dinner.
