Sweetcorn – filled Gem Squash topped with cheese

Little Gems are delicious with homemade sweetcorn filling. This tasty filling contains no sugar and is a healthy side vegetable or lunch.

Cut Gems in half and boil in salted water until soft (about 15-20 min)

Hollow out and place seeds into cooked corn kernels.

Add a blob of butter, Herbamare and 1 tsp Xylitol
(optional)

Using hand blender, blitz for 30 seconds, keeping some kernels aside for texture.

Spoon corn filling into gem squash cases and top with grated cheese.

Place at the top of oven and grill until cheese is melted and golden brown.P1180668

Makes a hot, tasty lunch or attractive vegetable served with your roast dinner.
