Best ever gluten free Carrot muffins

These carrot muffins are moist and delicious. Iced with cream cheese & honey, topped with walnuts and dusted with cinnamon are simply the best !


Recipe makes 18 muffins

1 1/2 cups sugar

4 eggs


Step 2

Beat until creamy:

1 cup Organic Coconut Sugar

1 Tbs soft Coconut Oil

4 eggs

1 Cup Olive Oil

Step 3

Sift following ingredients:

2 cups self raising gluten free flour

2 tsp cinnamon

1 tsp bicarb

1 tsp salt

Add to mixture. Beat for 1 minute

Step 4

Mix all ingredients.

4 cups grated organic carrots

1 cup grated coconut

1 cup chopped walnuts or pecan nuts.

Dates and raisins

Spoon into muffin tin


Bake in preheated oven at 175 C for about 20- 25 minutes.


Cool muffins


These carrot muffins are tasty without any topping, however if you want to turn them into a heavenly delight then cream cheese icing is the perfect finish.

Step 5

Icing :

300g cream cheese

2-3 Tbp creamed honey

Mix honey and slowly add cream cheese. Ice each muffin and decorate with chopped walnuts and sprinkle with cinnamon. Perfect with a cup of ginger tea or health coffee.
